At La Ilustre we use it as the main ingredient: not to flavour, but to build cocktails that taste like Seville, with a contemporary edge.

Every month we host a guided tasting where it's not just about drinking — it's about understanding. We open bottles with history, share who's behind each winery and why that wine or spirit tastes exactly the way it does.
From a fino aged in a century-old solera to a craft gin with local botanicals, each session is a short but intense journey. No pretension, no scores, no glasses nobody knows how to hold. Just great bottles, great stories and people eager to discover.
